When we think about the skills required to open a restaurant, our minds automatically think of culinary technique and business know-how. Yet what about that all-important profit driver: alcohol? In ICEs Mixology Center, students bridge the gap between beverage management theory and practice behind our state-of-the-art educational bar.
It used to be that when you opened a bar, you just served the standard drinks: Manhattans, old fashioneds, martinis, etc. There wasnt a need for drink recipe development. Over the past decade, that has totally changed: todays bars and restaurants are expected to offer a custom drink menu that complements the business overarching concept. Anthony Caporale, ICE Director of Beverage Studies
